I'm a little surprised they aren't just listed as variants for the Mechbuster and Meteor.

Under aerospace fighters I see two entries model name Seabuster. Under variant one says IH the other says Strike Fighter.

Is that supposed to be the Seabuster variant of the Mechbuster?

According to sarna their introduction/production years are all pre-3100. Except for the Shikra, intro year 3101.
